Watermelon salad recipe

Ingredients

  • 1/2 watermelon, cut into bite sized chunks
  • 3 cups baby spinach
  • 1/2 red onion, thinly sliced
  • 1/3 cup feta, crumbled
  • 1/4 cup slivered almonds
  • 1 tbsp chopped fresh basil

Dressing

  • 1 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • Salt and pepper

Method

  1. Combine all dressing ingredients into a bowl and slowly whisk together
  2. In a large bowl, combine melon, spinach, onion and feta. Pour the dressing over the mixture and toss gently
  3. To serve, garnish with slivered almonds and basil.

Serves 2
