Stuffed Zucchini Boats

Zucchini is a nutrient-dense food that is high in fibre and vitamins and low in carbohydrates and calories. It also improves Thyroid function, digestion and eye health.

Serves: 2 as a main, 4 as a side.

Ingredients

  • 2 Medium Zuchini, halved lengthwise
  • 1 large egg beaten
  • 1 cup torn crusty bread
  • 2/3 cup grated Parmeson
  • 1/2 garlic clove minced
  • 1/2 cup quartered cherry tomatoes
  • 2 tsp lemon zest & 2 tbsp thyme leaves
  • 1/4 cup pine nuts
  • Salt, pepper & olive oil

 

Method

  1. Preheat oven to 220°c
  2. Hollow out the zucchinis (keep flesh aside) and place cut side up boats on a baking tray
  3. Squeeze water out of zucchini flesh and mix with remaining ingredients
  4. Drizzle zucchini boats with oil, sprinkle with salt & pepper, spoon in filling and bake for 15-20min until golden brown
  5. Serve with a side salad or roast potatoes
