- 2 eggs
- 1/4 cup mushrooms
- 1/4 cup capsicum, diced
- 1/4 cup zucchini, grated
- 1 tbs spring onion, diced
- sprinkle of grated cheese
- sprinkle of mixed herbs
- Beat eggs until lightly foaming.
- Mix in mushrooms, capsicum, zucchini, green onions and cheese. Sprinkle in mixed herbs.
- Heat non stick frying pan or slightly oiled pan.
- When pan is hot enough, add egg mixture and cook until almost set.
- Flip half of the mixture onto itself to cook until lightly brown.
