Loaded vegetable omelette recipe

Ingredients

  • 2 eggs
  • 1/4 cup mushrooms
  • 1/4 cup capsicum, diced
  • 1/4 cup zucchini, grated
  • 1 tbs spring onion, diced
  • sprinkle of grated cheese
  • sprinkle of mixed herbs

Method

  1. Beat eggs until lightly foaming.
  2. Mix in mushrooms, capsicum, zucchini, green onions and cheese. Sprinkle in mixed herbs.
  3. Heat non stick frying pan or slightly oiled pan.
  4. When pan is hot enough, add egg mixture and cook until almost set.
  5. Flip half of the mixture onto itself to cook until lightly brown.

Serves 1
