Lifestyle Wellness Recipe: Healthy Apple Crumble
Focusing on your diet? Dieting doesn't mean you have to miss out on your favourite sweet treats. Olivia Turnbull, the Lifestyle Communities® Wellness Coordinator shares her secret healthy apple crumble recipe. Yummm!
Serves 6 (1 apple per person)
Base Ingredients:
6 medium apples
1 1/2 cups of water
1 tsp. vanilla extract
1/2 tsp. cinnamon
Crumble Topping Ingredients:
1 1/2 cups organic oats
1/2 cup desiccated coconut • 1/2 tsp. cinnamon
1 tsp. vanilla extract
1 tbsp maple syrup
3 tbsp oil (extra virgin, coconut or macadamia)
Method:
Wash apples and cut into wedges or dice with the skin left on (remove core).
Place apples into a large heavy based pot.
Combine with water, vanilla and cinnamon.
Cook over a medium heat for about 15 — 20 minutes — stirring occasionally until the apples have completely softened and collapsed
To make the crumble:
Combine rolled oats, coconut, cinnamon, vanilla, maple syrup and oil then rub together with ngers to combine.
Preheat oven to 160 C. Fan forced.
Pile apple mixture into a suitable sized baking dish and scatter the crumble over the top.
Bake for 30 —40 minutes or until the crumble is golden.
Remove from the oven and serve with thick Greek style yogurt.
