Chicken Burrito Bowl

This burrito bowl is tasty, quick and a great post-workout meal as it restores the body with healthy fats (avocado), lean protein (chicken), smart fibre ( brown rice) and antioxidants (raw vegetables).

Serves 1

Ingredients

  • 1 cup of cooked brown rice
  • 100g of chicken breast
  • 1 tsp Mexican spice mix
  • 1 tsp vegetable oil
  • 1 tsp lime juice
  • ¼ sliced avocado
  • ½ cup sliced raw vegies (e.g. lettuce, capsicum, tomato, onion)
  • Coriander

Method

  1. Mix oil, lime juice and Mexican seasoning in a bowl and add chicken to coat
  2. Place chicken on a fry pan over medium-high heat and cook, covered, for 6 minutes on each size. Once cooked set aside to rest and slice when cool
  3. Layer the sliced chicken breast on top of the rice
  4. Top with avocado, sliced raw vegetables and coriander
