Anzac biscuit recipe

When it comes time to honour our fallen soldiers on Anzac day, it's tradition for many to whip up a batch of good old Anzac biscuits. To honour our Anzac's, this year we've whipped up our own batch and provided the recipe for those of you who would like to follow along.
Ingredients:


2/3 cup desiccated coconut

1 cup plain flour

1 cup rolled oats

2/3 cup brown sugar

125g butter, chopped

2 tablespoons golden syrup

2 tablespoons water

1/2 teaspoon bicarbonate of soda


Method:

Step 1
Preheat oven to 140°C fan-forced.


Step 2
Combine coconut, flour, oats and sugar in a bowl.


Step 3
Place butter, golden syrup and 2 tablespoons water in a saucepan over medium heat. Stir for 2 minutes or until butter has melted.


Step 4
Stir in bicarbonate of soda. Do not over heat/ burn the mixture.


Step 5
Stir butter mixture into oat mixture.


Step 6
Roll a tablespoon of mixture into balls. Place on trays, space at least 5cm apart. Flatten slightly.

Bake for 10 - 12 minutes or until light golden for chewy ANZAC biscuits for 15 — 16 minutes for crispy.



Leave on trays for 5 minutes then transfer to a wire rack to cool completely.
